WHITE CHOCOLATE CHIP + CHERRY OATMEAL MUFFINS

RECIPE

Ingredients:

1 ½ cups pitted cherries

1 cup milk

1 cup rolled oats

1 egg

¼ cup Batistini Extra Virgin Olive Oil

1 cup flour

¼ cup raw coconut sugar

2 tsp. baking powder

½ tsp. salt

½ cup white (or milk) chocolate chips

Directions:

Preheat oven to 450 degrees F. Grease muffin pan.

In a small bowl, combine milk and oats; let soak for 10 minutes.

In a separate bowl, beat together egg and Olive Oil. Stir into the oatmeal mixture. In a separate bowl, sift flour, salt, sugar, and baking powder. Stir flour mixture into the wet ingredients.

Cut the pitted cherries into quarters. Stir in white (or milk) chocolate chips and pitted cherries.

Pour batter into muffin cups until it’s 2/3 full. Bake for 10-15 minutes for minis. Bake 20-25 minutes for normal sized.
