FETTUCCINE WITH CREAMY BASIL-PINE NUT SAUCE

Ingredients:

1 package of fettuccine

1 tbsp. pine nuts

2 tbsp. apple cider vinegar

½ cup light ricotta cheese

½ cup plain nonfat yogurt

½ cup crumbled blue cheese

1 garlic clove

1 cup fresh basil leaves

1/3 cup Batistini Extra Virgin Olive Oil

¼ tsp. pepper

¼ tsp. salt

Directions:

Pulse garlic clove in food processor, 2 to 3 times. Add in basil, ricotta cheese, blue cheese, yogurt, vinegar, salt & pepper, ¼ cup Olive Oil.

Cook pasta according to package directions; drain. Drizzle the remaining olive oil over the pasta. Combine pasta and sauce in a large bowl; toss well. Garnish with pine nuts and fresh basil leaves.
