LIGHT SOUR CREAM BANANA BREAD

RECIPE

Ingredients:

1 cup raw coconut sugar

¼ cup + 2 tbsp. Batistini Extra Virgin Olive Oil

2 eggs

1 tsp. vanilla

¾ cup sour cream

1 tsp. baking soda

2 cups flour

¼ tsp. salt

½ cup chopped pecans

1 cup mashed bananas

Directions:

Add baking soda to sour cream. Mix sugar and butter in a separate bowl. Add eggs and vanilla. Mix until creamy. Gradually add sour cream, baking soda, flour, and bananas.

Pour into a small tube pan and bake at 350 degrees F for about 45 minutes – 1 hour.

Once cooled top with sliced bananas and pecans; serve immediately.

If you want to save the banana bread for later, don’ top with bananas or they will brown.
